The Joe Collins cocktail could be thought of as a very interesting twist on the Jack and Coke. It uses scotch instead of bourbon, which isn’t a big leap. But then it adds something really unexpected: sweet and sour – or, as I recommend instead, lemon juice and simple syrup.
You probably already know how well citrus goes with cola – squeeze a lemon or lime into a cola sometime if you never have before. That’s what the lemon juice brings, and the simple syrup ensures it won’t be too sour.
Recipe
- 1 ounce scotch
- 1 ounce lemon juice
- 1 tablespoon simple syrup
- Coke
Pour the scotch into a collins glass over ice cubes. Add the lemon juice and simple syrup, and stir well. Top the rest of the way with the cola – stir just a little, or not at all. Toss the cherry on top.
